Some of my favorite dishes come together when I’m just using the ingredients I have on hand and that’s exactly what happened with this sandwich.
I often make a coarsely chopped pea puree (lovely with a simple grilled fish) and imagined this would be delicious paired with some creamy mashed avocado. To spice things up a little, I added a quick dressing made with yogurt, olive oil and wasabi and put this all on a crusty baguette.
The result was a crazy good sandwich that I’ve already replicated multiple times and is really worth a post.
I think the success stems from all the different flavors: the creamy avocado, sweet peas, fresh yogurt, sour lemon and spicy wasabi just work so well together.
It’s a delicious spread just the way it is, but served on a sandwich it’s a satisfying (and healthy meal) in itself. You can also add some sliced tomato or crisp lettuce leaves.
I use a mortar and pestle, but choose a food processor if that’s what you prefer. The thing to remember is that you have to use plenty of salt and pepper to really lift the flavors and to add lemon or lime juice for both taste and color.
Ingredients
- 1 baguette (or ciabatta, bread roll)
- ½ avocado
- about ¼ cup (60 ml) green peas
- extra virgin olive oil
- lemon juice
- salt and pepper
- (optional: lettuce leaves and/or slices tomato)
- 1 tablespoon yogurt
- 1 teaspoon extra virgin olive oil
- ½ teaspoon wasabi (use more or less to taste)
Instructions
- Roughly mash the avocado and peas with a mortar and pestle (or in a food processor). Drizzle with olive oil and mix into a spread.
- Generously add lemon juice, salt & pepper. Taste.
- Mix all ingredients for the dressing. Thin with a little water if it’s too thick.
- Spread avocado mix on a baguette, add optional tomato or lettuce and drizzle over dressing.
