With the endless possibilities of cake decorations, labor-intensive nougat recipes and wide varieties of macaron flavors, we sometimes tend to forget how good basic recipes can be. Something like these simple butter cookies for instance.
You only need some standard ingredients (flour, butter, sugar, milk) to bake cookies that are a million times better than store-bought versions, cookies that fill your entire house with their comforting smell and are perfect to cut in your preferred shapes. I chose these hearts for a Valentine’s theme this time.
These cookies are crunchy and have just the right amount of sweetness. They are a great gift and can be easily kept for a few days if you store them in an airtight container. Use a cookie cutter to cut out the shapes or just work with a knife (like I did).
Make sure to keep an eye on them when they’re in the oven. Depending on the size and thickness you’ve created, they can burn pretty easily. Take them out of the oven when they’re golden brown and leave them to cool (and get nice and crispy) on a rack.
You could play a bit with the additions: use some cardamom for instance, or add a little lemon zest or vanilla to the dough. Go wild with the decorations if that’s what you like, or keep them as basic as mine.
You can also spread a cookie with some nutella and put a second one on top, to create the most wonderful filled chocolate cookies.
Ingredients
- 1 cup (125 gr.) self-raising flour
- 1/3 cup (75 gr.) butter
- 1/3 cup (60 gr.) white sugar
- 1 tablespoon + 2 teaspoons (25 ml) milk
- ½ teaspoon ground cinnamon
- a pinch of salt
Instructions
- Preheat oven to 400F (200C).
- Mix all ingredients and knead to form a soft dough.
- Roll out the dough on a floured surface (this is much easier to do between two sheets of non-stick baking paper) until about 1/8 inch (3 mm) thick. Cut out cookies and place on a baking sheet lined with baking paper.
- Bake in middle of the oven for about 12-15 minutes, depending on their size and thickness. Take immediately out of the oven when they’re golden brown. Leave to cool on a rack.

I just made these biccies, also adding Cardamon, and pressing two back to back with some Marshmallow Fluff joining them in the middle, and then sprinkling with icing sugar. What a success! The whole family has gobbled them down. Thanks for the fab recipe!
