Have you ever noticed the pretty heart-shaped leaves on radishes? Such a great example of those “little things” that make a dish, ingredient or presentation just a bit more special. A dish with fresh radishes would thus be perfect for Valentine’s day.
This can hardly be called a recipe. It’s more of a serving suggestion, an original and delicious way to eat your radishes. I came across this idea in successively a cookbook, a magazine and then someone told be how good it was. I had no choice, but trying it myself.
As with every good idea, the combination of ingredients is much more than the sum of its parts. There’s something about these three components that just works perfectly.
The crispy and sharp radish forms a pleasant contrast with the intense richness of the butter, and the crunchy salt flakes round it off.
It’s a great and easy appetizer for a dinner with friends or a delicious afternoon snack. You just dip a radish in some butter (or use a knife) and finish with a tiny sprinkle of salt.
The quality of ingredients is key. Make sure the butter is soft enough to spread, but not melted; you definitely want that creaminess. Use good quality course sea salt and choose fresh, crisp radishes.
Ingredients
- a bunch of fresh radishes
- a good knob of creamy butter, softened
- course sea salt (like Maldon, or fleur de sel)
Instructions
- Wash radishes well. Serve with remaining ingredients.
