While most workers have to deal with the sandwiches they took from home or a dull and overpriced meal from the canteen, some companies offer their employees really inspiring options.
At Bloomberg in New York for instance, employees not only get unlimited free fruits, vegetables, drinks and candy; they also can grind their own peanut butter from one of the four machines in the building. Or take the head office of Google in California; with unlimited energy bars and yogurts, and a variety of cafetarias where chefs serve everyone free breakfasts (‘spelt bread French toast with coconut muesli’, for instance), lunches (‘vegan tofu scramble’) and dinners (‘shrimp en escabeche with blood orange mojo’) that wouldn’t look out of place in a fancy restaurant.
Whatever food your workspace provides, a healthy and energizing snack is always welcome during the day.

These cookies are perfect for those times when you need to get going, but can’t use a sugar rush and feeling tired minutes later. They are also perfect for children’s lunchboxes, or simply as a little pick-me-up with a cup of coffee.
These little cookies are very easy to make and require no eggs, butter or flour. They have a delicious nutty taste with a slight hint of coconut, a pleasant crunchy texture and it’s practically impossible to eat just one.
You can easily vary with the additions: substitute raisins for the cranberries for instance, use regular butter instead of the coconut oil, or add some nuts. I can also highly recommend adding some chocolate chips.
Ingredients
- 2 ½ cup (200 gr.) rolled oats
- 1 teaspoon baking powder
- a pinch of salt
- 2 tablespoons (30 ml) coconut oil, melted
- 5-7 tablespoons honey (depending on your taste)
- ½ cup (120 ml) warm water
- 4 big tablespoons dried cranberries
- optional: handful of chocolate chips or nuts
Instructions
- Preheat the oven to 375F (190C).
- Mix oats, baking powder, salt, melted coconut oil and honey in a bowl. Add the water and combine until the mixture resembles dough. Add more water if necessary.
- Mix in the cranberries (and optional chocolate/nuts) and form 20-24 round balls with your hands. Flatten these and place on a baking sheet covered with baking paper.
- Bake for 20-25 minutes, or until golden brown. Leave to cool. Store in an airtight container.

Wow! What a simple recipe! I love how the only sweetness is from honey and cranberries. No flour either. I will try this, but I will use half rolled oats and half oat bran, and then sub my almond/coconut milk for the water. Can’t wait to try these healthy cookies. Thanks!
