Quinoa with Creamy Avocado Dressing

Lately quinoa has been my go-to dish when I want a quick and healthy meal. I love the versatility of it and the nutty taste that combines with almost everything I add. I shared the recipe for my Asian quinoa with avocado before and this dish is a delicious variation.

It started when I mixed some leftover avocado with yogurt and a splash of lemon juice and this turned out to be a wonderful dressing. It’s creamy and fresh at the same time, with the soft avocado and the kick of lemon. I’ve made this dressing several times already and served it over simple side salads and Mexican nachos, but I think it’s just outstanding in this dish.

There’s something about the contrast of the little nutty grains with the cooling, creamy dressing that’s just so good. This dressing really elevates a simple quinoa with some herbs and vegetables into a complete vegetarian meal.

It can be a quick weekday dinner or a lunch that leaves you satisfied and energized, and it’s nice both hot and cold.

It’s really as comforting as it’s healthy and it’s made in minutes too. I’m sure this dressing will be a new favorite!

Quinoa with Creamy Avocado Dressing

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Serving Size: 4

Quinoa with Creamy Avocado Dressing


1 big ripe avocado (or 2 small ones)
½ cup (8 tablespoons/120 ml) thick yogurt
a big splash of lemon juice
salt and pepper, to taste
To serve:
2 cups quinoa, rinsed
3-4 cups vegetable stock (see package instructions)
grilled vegetables (I used zucchini, tomato and spring onion)


  1. In a bowl, mash the avocado flesh with a fork until it’s creamy but still has some bite. Add the lemon juice (this will also prevent it from turning brown) and yogurt and mix.
  2. Add salt and pepper to taste and refrigerate until serving.
  3. Cook quinoa in stock according to package instructions. When done, mix with vegetables and serve on plates.
  4. Drizzle over avocado dressing. Eat.
