Lately quinoa has been my go-to dish when I want a quick and healthy meal. I love the versatility of it and the nutty taste that combines with almost everything I add. I shared the recipe for my Asian quinoa with avocado before and this dish is a delicious variation.
It started when I mixed some leftover avocado with yogurt and a splash of lemon juice and this turned out to be a wonderful dressing. It’s creamy and fresh at the same time, with the soft avocado and the kick of lemon. I’ve made this dressing several times already and served it over simple side salads and Mexican nachos, but I think it’s just outstanding in this dish.
There’s something about the contrast of the little nutty grains with the cooling, creamy dressing that’s just so good. This dressing really elevates a simple quinoa with some herbs and vegetables into a complete vegetarian meal.
It can be a quick weekday dinner or a lunch that leaves you satisfied and energized, and it’s nice both hot and cold.
It’s really as comforting as it’s healthy and it’s made in minutes too. I’m sure this dressing will be a new favorite!
