I wondered if I can really call this a recipe, but it’s too good not to share and I think the simplicity is exactly what makes it perfect for hot summer days. (Not that we experience hot summer days at the moment, but I just ignore that!)
If you – like me – always have some berries in the freezer, this dish can be made in minutes and truly is an instant snack or dessert. No ice cream maker required, just a few seconds blending and you’re done. It’s such a healthy dish too, but it doesn’t taste that way at all: the frozen yogurt gets really creamy and soft. You can eat this froyo straight away, or just put it in the freezer for later use. You can vary with different berries, but I definitely prefer this version with the sweet raspberries.
I use just a little or even no sugar, because I like the slightly sour taste of the yogurt coming through, but you just have to experiment and sweeten according to your own taste.
Ingredients
- 2 ¼ cup (500 gr.) thick (Greek) yogurt
- 2 ½ cup (500 gr.) frozen raspberries (or use different berries)
- 1-4 tablespoons sugar (to taste)
Instructions
- Place yogurt, frozen berries and sugar in a food processor.
- Mix until blended.
- Serve immediately or store in freezer.
