I often eat my bagels the traditional way: with cream cheese and smoked salmon, that is. It’s a classic combination and always good, but a little variation can be nice. After making a smoked fish spread (based on a recipe from Jamie Oliver) last week, the leftovers turned out to be the perfect addition to my bagel at lunch the next day.
The chewy bagel forms such a delicious combination with the creamy soft cheese, smoked trout, fresh lemon, crunchy spring onions and sharp touch of horseradish. I’ve already made this spread several times and experimented with other types of fish (smoked salmon and sardines) too; there’re all equally good!
If you’re not much of a bagel-lover (yes, those people do exist!), you really have to try this spread on a piece of toast, as a dip for veggies or with some crackers. It’s a great snack or elegant starter at a dinner party. Best: it’s made in minutes and can easily be prepared in advance. Believe me; you can’t just make this once!
