Mini Tuna Melts

I never have a bowl of soup without some bread on the side. It can be a fresh and crusty baguette, soft naan bread or buttery garlic bread; anything I can dip in the soup will be fine.

I also love the classic soup & grilled sandwich combination; it’s an almost instant meal that you can easily prepare with whatever is in your fridge.

Last week I bought a baguette to accompany a simple soup and wanted to do a bit more with it. Suddenly the small slices of baguette turned into mini tuna melts and became a perfect and comforting addition to my bowl of carrot soup.

It’s a simple and quick idea that’s great for easy weeknight dinners but can also be served at a party or as an appetizer.

Skip the tuna for a vegetarian version or use ham when you crave a traditional grilled cheese & ham sandwich. They’re good either way, just make sure to use a nice melting cheese and you will be fine. More than fine…
