Sometimes the simplest ideas are the best. I had a sudden craving for frozen yogurt, and unfortunately froyo is not that common here as in – for instance – the US. When there are no frozen yogurt shops with a large variety of serve-yourself flavors and even a larger variety of add-your-own toppings available, you need to be creative. And this recipe proved to be very delicious and incredibly fast!
This is truly an instant frozen yogurt. You only need to put a few ingredients in a food processor and you’re done. You can eat the frozen yogurt straight away, or store it in the freezer for later use.
It’s everything you want from a frozen yogurt: cold, creamy and a gorgeous cerise-pink colour. At the same time it’s healthy and you know exactly what went into it; no storebought version can beat that!
Make sure to use a thick variety of yogurt (like Greek yogurt) and frozen berries. I think the amaretti cookies really add a special touch and turn this simple dessert into something special, but you can skip them for a simple version. You can also vary with other cookies, use some chocolate or add a few leaves of mint or basil.
Ingredients
- 2 ¼ cup (500 gr.) thick (Greek) yogurt
- 2 ½ cup (500 gr.) frozen blueberries (or use different berries)
- 1-4 tablespoons sugar (to taste)
- 2 handfuls of amaretti cookies
Instructions
- Place yogurt, frozen berries and sugar in a food processor.
- Mix until blended, add the cookies and blend for a few seconds more.
- Serve immediately or store in freezer.
