One of the most popular recipes on TLT is my recipe for Carrot Cake Bars. It’s a quick, easy and healthy recipe and I make a batch of these bars almost every week.
But for this Holiday season I like to change things a little bit; add some Christmas touches to make these bars perfect for the season. They are a great and healthy snack between al those festive big meals and can be easily freezed as well.
Cranberries just scream “Christmas” to me, and they combine really nice with the grated carrot and oats. And the cinnamon and grated orange (or persimmon) peels give these bars that sweet, aromatic and warm smell of Christmas morning…
Carrot Cake Bars: Christmas Style
Ingredients
- 1 cup (rolled) oats
- 1/2 cup of water
- about ½ cup of grated carrots
- 2 tablespoons dried cranberries
- ½ teaspoon cinnamon
- ¼ teaspoon grated orange/persimmon peel
- 2 tablespoons pecans or walnuts (optional)
- honey or sugar, to taste
- a sprinkle of salt
Instructions
- Preheat oven to 380F (190 C).
- Mix all ingredients – expect for the water – together.
- Add the water until everything is well combined. The mixture should be like a very thick batter.
- Press into a baking pan (covered with parchment).
- Bake for approx. 20-25 minutes, or until top is slightly browned.
- Let cool and cut in slices.
