I’m sure you are a lover of Carrot Cake. Am I right?
And although carrot cake is always good, sometimes you want something that’s a tiny bit better for you. A few slices of carrot cake everyday may be a little too much, but you can easily eat a few of these each day. These bars are super healthy, filling and most important: they are really good. It’s truly the taste of carrot cake in a healthy, little bar.
I like to make these oat bars and eat them as a quick and satisfying snack between meals. They are easy to take with me in my bag and taste good any moment of the day. Children love them too, especially when you don’t tell them there are hidden veggies involved!
You can keep these bars for a few days in the fridge (if they will last that long of course!), but freezing works perfect too. I don’t have particularly sweet tooth and the raisins already add some sweetness, but feel free to add some sugar or honey.

Am I weird when I say I’ve never tasted carrot cake? or maybe I have but it didn’t stick in my mind somehow… For a long time I tought carrot cake wasn’t real. All due to that joke about the bunny going into the baker store and asking for carrot cake…

These look delicious! What size baking pan do you recommend?
If I make 6 bars, I often use a 8 x 5 baking pan (about 20 x 12 cm). But I’ve used bigger and smaller pans as well, with good results. Because the unbaked mixture is pretty firm, it’s even possible to not fill the entire pan and press it into the desired shape. Good luck!

Had a craving for carrot cake but I didn’t want to ruin my workout. So I tried this. These totally hit the spot. Only thing I did different was use 1 tbsp of brown sugar instead of honey. Delicious!

Love these, made them this morning. They came quite moist. I altered the recipe a bit as I made these for my 1 year old. He loved them.

I tried these today, used 1 tablespoon dark brown sugar, no honey, lovely. I’ve been trying to find a flapjack/muesli bar recipe without much sugar and these are perfect, thank you
